Position Summary:

  • Reports to Executive Chef
  • The Sous Chef is the second in command in the kitchen and generally oversees food production
  • The Sous Chef assumes all the duties of the Executive Chef in the Chef’s absence
  • This position requires a proven track record of education, leadership, and successfully commanding a high-volume kitchen.

Responsibilities include:

  • Ensures a high level of food quality and service to Red Rock patrons
  • Maintain high visibility in the kitchen and public areas
  • Provide roll-call to servers to explain menu items and daily specials to help them sell effectively
  • Ensure all food production areas and equipment are clean and in good working order
  • Assisting the Executive Chef in interviewing, hiring, and training employees
  • Planning, assigning, and directing work
  • Appraising performance
  • Rewarding and disciplining employees
  • Addressing complaints and resolving problems

Job Tasks:

  • Plan menus and recipes
  • Systematize food production to maximize efficiency and consistency
  • Enforce purchasing specifications, storeroom requisition systems, product storage requirements, standardization recipes and waste control procedures
  • Assist Executive Chef in recruiting, managing and disciplining kitchen personnel
  • Train kitchen personnel in food production principles and practices and ensure that all recipes and food production practices are followed
  • Assist Executive Chef in scheduling kitchen employees in conjunction with business forecasts and predetermined budget
  • Accountable for controlling food costs and meeting budgeted expectations
  • Train service personnel regarding food preparation, ingredients, nutritional values and special dietary requests

Customer Service and Professionalism

  • Serve as role model and set the standard for all employees to maintain high-quality and consistent customer service
  • Respond to customer questions or concerns the empathy and professionalism
  • Represent Red Rock through various public events and public relations efforts

Communication

  • Proactive communication with kitchen staff, front-end staff, and management
  • Clear and pleasant writing skills to correspond with other managers and company leaders
  • Ability to work and communicate in a bi-lingual environment is preferred

Problem Solving and Quality Control

  • Continually evaluate current practices and processes for potential improvement
  • Seek out and recognize potential areas of conflict before they occur
  • Initiate ways to improve current business methods, quality of products and services

Technical Skills

  • Experience and knowledge of budget analysis methods
  • General accounting skills
  • Ability to operate point-of-sale applications

Flexibility

  • Must be willing to work overtime as needed and assist the workload of others

Physical & Mental Requirements

Must have the physical and mental strength and endurance to be able to perform duties, in extreme environments, as well as the ability to handle stressors of the position in operational and administrative situations.

Required to frequently lift and move 10 – 50 pounds. Expected to stand, sit, walk, climb, balance, stoop, kneel, crouch, crawl, bend, talk, hear, taste, smell, see, and operate objects, tools, and controls.
